Paleo Pepper Turkey Bombs
Today I created an award winning dish. Self proclaimed, but none the less, it was an incredible meal. This plate is full of color. One might say you were “eating the rainbow” which is great guideline when trying to pack antioxidants into your food palate. It’s got plenty of protein and fiber from the best sources on the planet… the root vegetable.
- 4 organic peppers
- 1 pound of organic ground turkey (thigh meat)
- 1 beat
- 2 carrots
- 1 summer squash
- 1 Zucchini
- 2 radishes
- 1 jalapeño pepper
- Sea Salt
- Coconut oil
- Black Pepper
Place your 4 peppers on parchment paper with tops cut off and remove the seeds from the inside of the pepper. Set the oven to 385 and bake for 15 minutes. The tops should be slightly browned when finished. Remove from the oven once toasted and set to the side. Soon enough these little guys will find purpose in your meal….natures bowl.
In a food processor or (a vitamin on the lowest setting) dice 2 carrots, 1 zucchini, 1 yellow squash, 2 radishes, a 1/2 beet.
Place this mixture in 1 inch of water and bring to a flash boil for 3-4 minutes. Remove from stove and drain all water into a cup.
Save the juice: This vegetable broth is packed full of vitamins and minerals (macro nutrients) and is a great pre-digestive tea to sip before dinner. Always drink before your meal and not during, the last thing you want to do is dilute your stomach acid before it’s getting ready to break down those nutritional blocks of fire wood.
*Note to self: beet juice can have a mild laxative effect for sensitive individuals, not a judgement, just an observation. #KAPOW
Step 2. In a large frying pan place a pound of turkey with one diced jalapeño pepper. Two if you like the heat in the kitchen!
Add 1 table spoon of coconut oil to the pan. Season with 2 teaspoons of turmeric, sea salt, thyme, fresh basil leaves and rosemary.
Place on med to low heat and simmer until light brown. Approx. 10-12 minutes. As far as turkey goes you will get better flavor, consistency, and a juicier end product by using thigh meat because of the fat content. *Grass fed beef will also taste great as a substitution
Step 3: Add your vegetable medley to the large pan of simmering (now completely cooked) turkey. Stir together and let these flavors collide for about 4 minutes on low heat.
Step 4: Now it’s time to stuff your peppers and complete the final stage of this game changing meal. Fill each pepper to the brim and replace the top of each. I like to change the colors for a variation of hues. Why? Because it pleases me…that’s is all. In the kitchen, and not many other places, you can be king!
Place your stuffed peppers back into the oven and bake for another 15-20 minutes. Your pepper tops are going to get pretty brown but that’s ok…the flavor in these guys…is…incredible.
Step 5: Plate your dish as though you were presenting for the king of England. Why? Because you are the king of your own domain and you deserve to be treated as such. Remember, when you put love into the food you prepare it tastes that much better. It’s 2016 and it’s time for you create the best possible version of yourself possible. With every meal…you have the opportunity to grow stronger, smarter, and more virile.
*Note: I’ve added white jasmine rice as a fast digesting carb for my” lady” cause she danced all day and needed the refuel. I on the other hand I am experimenting with a ketogenic diet (touted for it’s amazing anti-cancer properties) so I plated mine with lettuce and a side of homemade guacamole.
